Climbing the Croquembouche

Today I am going to attempt the Croquembouche!

Armed with ‘Auntie Doreen’s’ tried and trusted Choux pastry recipe, the instructions from the first season of Masterchef Australia, Nanna’s kitchen (and of course Nanna on standby) I plan to make a miniature Croquembouche with a dolly varden tin for my sisters 21st dinner tonight.

Should the Croquembouche not work it will be a nice arrangement of Profiteroles. Should they not work out I will just have to whip up a butter cake!
